Ingredients:

● 1 head of lettuce (romaine or mixed greens)

● 1 cup of cooked quinoa

● 1 cup of diced roasted butternut squash

● 1 cup of diced apples

● 1 cup of pomegranate seeds

● 1/2 cup of chopped walnuts

● 1/4 cup of crumbled feta cheese

Instructions:

1. Follow the directions on the quinoa's package to prepare it first. After cooking, put it aside to cool.

2. Set your oven to 375 degrees Fahrenheit. Little butternut squash cubes should be peeled and diced. Add some olive oil and spread them out on a baking pan. When they are soft and barely browned, roast them for 20 to 25 minutes, seasoning with salt and pepper.

3. Washing and chopping the lettuce into bite-sized pieces can be done while the butternut squash is roasting. To a big bowl, add it.

4. To make small pieces, wash and dice the apples. These should be included in the lettuce bowl.

5. To extract the seeds, cut the pomegranate in half. Along with the remaining ingredients, place them in the basin.

6. Add the cooled quinoa and butternut squash to the bowl as well.

7. To make the dressing, combine the olive oil, balsamic vinegar, honey, salt, and pepper in a separate small bowl.

8. After adding the dressing, toss the salad to incorporate.

9. The salad should be topped with feta cheese crumbles and chopped walnuts.

10. Dispense and savor!
